This naturally processed lot is roasted to bring out notes of chocolate, dried berries, and a juicy acidity.
The Kayon Mountain Farm with about 300 hectares of coffee is owned by Ismael Hassen Aredo and his family since 2012. The elevation of the farm ranges from 1900-2200 meters and grows Ethiopian heirloom varieties. The farm is located well south of the capital of Addis Ababa, in the Guji zone of the Shakiso district. Ismael has a farm staff of 25 full-time and 300 seasonal employees for the harvest. The farm offers free transportation services as well as financial support for building schools and administration buildings for the community.
There is a plant nursery on-site in order to raise coffee seedlings and they utilize acacia and other indigenous shade trees to protect the coffee plantings, as well as for creating a natural compost for fertilization. Ismael is meticulous about not only the structure and management of the farm itself but also in the harvesting and processing details. He produce both washed and natural processed lots.

I've roasted my fair share of Guji. I know its a temperamental bean and the desired blueberry note varies wildly from harvest to harvest. The temptation is to roast it light in order to preserve that blueberry note, but that comes at the expense of the darker notes. Plum and chocolate are listed on the bag, but they are absent in the bean. No matter how I've tried dialing it in with various brewing methods, it always comes out with the unpleasant green/raw bean taste that mucks up the blueberry. It turns it into a "mixer," not to be enjoyed without masking the off notes.
So I'm not sure (and don't want to assume) if the reason for the extremely light roast is to attempt to preserve the blueberry, or if it is to keep in line with this fad of roasting beans as light as possible - which is a plague on the industry; Regardless, the result is a big ol' OOF.
I regret buying two bags at one time.
